Yantai's tasty Penglai Xiaomian

Yantai, a coastal city in East China's Shandong province, has a long history and profound cultural deposits.

Yantai is a tourist destination, a national historical and cultural city, and a city that boasts a great number of intangible cultural heritage items, such as Jiaodong Dagu, which is a type of ballad singing with drum accompaniment popular on Jiaodong Peninsula, and Yantai paper-cutting art, as well as many tasty foods including Laiyang lamp bowl, Yantai fried bean jelly, and Penglai Xiaomian, or Penglai Small Noodles.

The chef usually spends an hour every day to boil the soup. Penglai Xiaomian takes major forms in fried sauce (zhajiangmian), gravy (dalumian) and seafood noodles, and it uses fresh fish from the sea, and old hens' eggs to make the rich, thick gravy. Penglai Xiaomian melts in the mouth, so there's no need for chewing the food.
