As early winter settles over Shandong province, Anqiu city in Weifang is celebrating a bountiful ginger harvest. Recognized as China's leading production hub for ginger cultivation, Anqiu's fields span 200,000 mu (approximately 13,333 hectares), yielding about one million metric tons of ginger annually. Anqiu accounts for a whopping 80 percent of China's total ginger exports, with its products reaching over 80 countries and regions worldwide.
The region's unique climate — more than 2,400 hours of sunlight a year — combined with fertile, selenium-rich soil, provides the perfect environment for cultivating high-quality ginger. Anqiu's ginger is known for its large size, vibrant color, and smooth texture, making it a sought-after product worldwide.

This success is driven by innovations that are transforming local farming practices. Advanced technologies such as ground heating systems and smart climate controls now allow for off-season cultivation of red sprout ginger, overcoming the limitations of traditional harvest schedules. Meanwhile, at the Fuchuang Ecological Ginger Industrial Park, scientists are developing new ginger varieties that are resistant to soil-borne diseases — a long-standing challenge in ginger farming.
Beyond its impressive harvests, Anqiu is transforming its ginger industry through deep processing. Local businesses are now producing a range of products from ginger juice to essential oils and medicinal curcumin, diversifying the city's market reach.
With over 90 processing enterprises and a robust supply chain, Anqiu is building a global ginger brand. Its commitment to innovation, combined with its rich agricultural heritage, ensures that Anqiu ginger will continue to thrive in international markets for years to come.
