Yantai Vocational College of Culture and Tourism, a renowned institution dedicated to preserving Shandong's culinary heritage, is pioneering international pathways for learning about Shandong cuisine.
The course "Shandong Cuisine Production Techniques" developed by the college has now been included in the mandatory credit curriculum system for Spanish higher education.
Through a remote teaching system, teachers from the college demonstrate and explain to Spanish students the specific steps required to cook Shandong dishes.
Over the course of nearly two months, Spanish students will learn the theory and cooking techniques of various Shandong dishes, including braised pork and kung pao chicken. Upon completion of the course, students will receive a graduation certificate.
On March 28, a group of renowned South Korean chefs visited the college for cultural and culinary exchanges related to Shandong cuisine.
"We are here to learn and study authentic Shandong cuisine. In the future, Chinese cuisine will also be developed based on Shandong cuisine in South Korea, especially traditional Shandong cuisine from Yantai," said the president of the South Korean Chinese Cuisine Cultural Exchange Association.
One participant in the exchange said that the harmonious blend of flavors in Shandong cuisine is a key aspect of learning for many culinary styles, which was also the focus of this exchange for their South Korean counterparts. The light use of oil and salt in South Korean cuisine is also an area from which Shandong cuisine can draw inspiration.
As a renowned institution for Shandong cuisine in China, the college leverages its expertise to integrate into the Belt and Road initiative and pave a new path for vocational education outreach.
