Fushan big noodles were originally known as Fushan noodles. They were called big noodles because the bowls to hold the noodles were big. As early as the mid-19th century, Fushan noodle restaurants prevailed in Yantai, winning wide acclaim from foodies around the country.
Fushan noodles take major forms in fried sauce(zhajiangmian), gravy (dalumian) and seafood noodles.
The major difference between Penglai small noodles and Fushan big noodles lies in the soup. The small noodles use snapper soup. Also, they are so thin that they can melt in the diner's mouth without chewing.
If you visit Yantai, do taste the big and small noodles to experience their unique flavors.
